Who builds it
Michela Bigio earned her AIS diploma with the Italian Sommelier Association, and continued her studies to become a wine tourism operator, refining her skills with a professional bartending course.
Cellar visits, meetings with producers, study trips and tastings are the work that never appears on the list but decides what goes onto it. That is where the pairing with the chef’s dishes comes from.
